Les Halles at night in one of the meat pavilions devoted to beef where all the aisles of fresh carcasses were the same. These beef carcasses were the largest of all the meat. Only the "forts des Halles" - the meat porters of Les Halles - were strong enough to lift these large carcasses. They were the strongest of all the porters and only they were employed to carry the meat outside to waiting lorries. The carcasses are suspended from sturdy hooks on meat hanging rails under brilliant floodlighting. There is meat lying on the step waiting to be hung and debris on the untidy floor. Photographer Harold Chapman recalls that this is "my favourite photo of the meat hall. The fort is walking down the alleyway but he can't see where he is going because the neck of the meat has fallen against his face. He is going down the centre of the aisle so he doesn't have to see in front of him. But that is why they stopped people going in, didnt allow people to take pictures. I was only able to get these pictures taken in a fleeting moment - no police outside, no security guard hanging about, so I could walk down the aisle because no one was there for a few seconds so I had time to pop in and take the pictures, one, two, three, then pop out again. That is how things are done - take the opportunity. I couldn't do this every night or every day - I couldn't be seen hanging around outside. After doing this one night I wouldn't go back in that area for a long time - I would go somewhere else. One had to have a permit to photograph in Les Halles and they wouldn't give me one - I tried to apply for one but they wouldn't give it to me. It was supposed to be demolished soon but that was not to be - it was postponed for several years because of the uproar."
