Pepsin stomach enzyme, molecular model. Pepsin is a protease enzyme that is secreted as part of gastric juice into the stomach in an inactive form known as pepsinogen. When this form comes into contact with hydrochloric acid it is converted into the active form that hydrolyses proteins into smaller polypeptides (peptones). The structure shown here is porcine (pig) pepsin. Atoms are represented as spheres with conventional colour coding: hydrogen (white), carbon (grey), nitrogen (blue), oxygen (red), sulphur (yellow).
