The restaurant L`Aragosta at Livorno harbour is the hot spot of culinary tradition in Livorno. It is the seat of the association of the Cacciucco in Livorno. The name of the fish soup derives from Turkish "kuzuk"; meaning "small"; "small things". It refers to the historically lower quality ingredients of small fishes and others in the meal of the local fishermen. As well; "kuzuk" shows the multicultural background of Livorno; who once was seat of the Pisa and Livorno based military order of the knights of St Stephen. As well; Livorno once had a slave market selling mostly imprisoned pirates from the North African Coast and from Turkey.
