Les Halles on the corner of Rue Baltard with Rue Berger, the Place des Halles and Rue des Halles. Opposite, on the left, is Pavillon 8. In the right hand corner skilled porters are standing waiting by their rented diables ("devils" - the very heavy well-built wooden barrows) for customers to hire them to deliver goods that they have purchased. The porters are waiting to be called to take larger orders to restaurants, hotels and large shops. The giant central fresh food market of Paris spread far beyond the confines of the twelve Baltard pavilions. There was the highly organised Carreau des Halles near the Church of Saint-Eustache where only certain fresh produce was allowed to be sold by market gardeners and vegetable sellers. But there was also the "carreau forain" which occupied a number of streets, with designated areas for different kinds of fresh produce such as green beans and peas, or artichokes, lettuces and herbs, and areas for producers from different suburbs of Paris, such as Versailles, Noisy, Aubervilliers and Montesson. Many crates are piled up on the corner of the pavement and are spilling out into the road. Piled up in front of the cafe bar Le Jean Bart are many emtpy boxes which extend into Rue des Halles into the distance, waiting to be collected and reused. The fresh produce had to be sold by 7 o'clock in the morning or else cleared away and removed by 8 o'clock by the authorities in order to allow the free circulation of traffic in the roads. But in the winter the time was extended by an hour to 9 o'clock. Photographer Harold Chapman recalls, "I wanted to photograph from above and when I had the opportunity went up the stairs inside the pavilion (Pavillon 6 - tripes and fruit and vegetables) and took the photographs through the bars as there was no glass there and was suddenly confronted by the security guard who ordered me out.
