Mongolia, Khentii Mountains, north-west of Ulan Bator (Ulaan Baatar), mares being milked at the end of the day. Summer in Mongolia is known as the 'white season' and herders and nomads work around the clock to process milk - turning it into cheese and a variety of other products to last them through the winter. Fermented mares' milk, known as koumiss, is, most definately the most popular - a slightly fizzy, cheesy beverage which is both refreshing and thirst quenching after a long day's ride. The Khentii mountains are under 2,000m and are thickly forested and well watered. The watershed of three huge drainage basins - the Arctic Ocean, the Pacific Ocean and the inland basin of Central Asia - come together at Chandmani Mountain (1,854m) in Khentii Province. The rivers, more than 70 and including the Onon and Kherlen, provide lush scenery but at times they make transport very difficult, especially after rain. The aimag (region) is generally regarded to be the birthplace of Genghis Khan and one of the possible places where he is buried.
